Ingredients
  

  • 1 lb fresh or frozen salmon fillets thawed, skinless
  • ½ cup all-purpose flour or gluten-free flour
  • 2 tbsp cornstarch
  • 1 egg lightly beaten
  • 1 cup panko breadcrumbs
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Oil for frying or baking spray for air fryer/oven
  • Optional marinade: 2 tbsp soy sauce 1 tbsp honey, juice of 1 lime, minced ginger

Instructions
 

  • Prepare the Salmon : Pat the salmon fillets dry with paper towels. Cut them into bite-sized pieces, roughly 1-inch cubes.
  • Set Up Breading Station : In three shallow bowls, mix the flour and cornstarch in one, beat the egg in another, and combine panko breadcrumbs with spices (paprika, cayenne, garlic powder, salt, and pepper) in the third.
  • Coat the Salmon : Dip each piece of salmon into the flour mixture, then the egg wash, and finally the breadcrumb mixture. Press gently to ensure the coating sticks.
  • Cook the Bites :
  • Frying : Heat oil in a skillet over medium-high heat. Fry the coated salmon bites in batches for 2–3 minutes per side until golden brown.
  • Baking : Preheat the oven to 400°F (200°C). Place the bites on a parchment-lined baking sheet sprayed with oil. Bake for 12–15 minutes, flipping halfway through.
  • Air Fryer : Cook at 375°F (190°C) for 8–10 minutes, shaking halfway through.
  • Serve : Drain fried bites on paper towels if needed. Serve hot with your favorite dipping sauces like sriracha mayo, teriyaki, or aioli. Enjoy!
