Ingredients
  

  • 1 lb fresh salmon fillets cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup vegetable oil for frying
  • Lemon wedges for serving
  • Dipping sauce of choice tartar sauce, sriracha mayo, or garlic aioli

Instructions
 

  • Prepare the Salmon: Pat dry the salmon fillets and cut them into bite-sized pieces.
  • Set Up Breading Stations: In separate bowls, place flour, beaten eggs, and a mixture of panko, garlic powder, paprika, salt, and black pepper.
  • Bread the Salmon: Coat each piece in flour, dip in egg, then coat with seasoned panko breadcrumbs.
  • Heat the Oil: In a deep skillet, heat vegetable oil over medium-high heat to 350°F (175°C).
  • Fry the Salmon Bites: Carefully add the breaded salmon pieces in batches, frying for 2-3 minutes per side until golden brown and crispy.
  • Drain and Serve: Remove and place on a paper towel-lined plate to absorb excess oil. Serve hot with lemon wedges and your favorite dipping sauce.
