Ingredients
  

  • 4 fresh cod fillets about 6 oz each
  • Salt and pepper to taste
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon grated fresh ginger
  • 2 minced garlic cloves
  • 1 teaspoon sesame oil optional
  • Sliced green onions for garnish
  • Toasted sesame seeds for garnish

Instructions
 

  • Prepare the Glaze : In a small bowl, whisk together soy sauce, honey (or brown sugar), grated ginger, minced garlic, and sesame oil. Set aside.
  • Season the Cod : Place the cod fillets on a plate or baking dish. Season both sides with salt and pepper.
  • Cook the Cod :
  • For Baking : Preheat the oven to 400°F (200°C). Place the cod fillets in a baking dish, pour half the glaze over them, and bake for 12–15 minutes. Brush with remaining glaze during the last 5 minutes.
  • For Pan-Searing : Heat a non-stick skillet over medium-high heat. Add a splash of olive oil, then cook the cod fillets for 4–5 minutes per side, basting with the glaze during the last few minutes.
  • Garnish and Serve : Transfer the cooked cod to plates. Garnish with sliced green onions and toasted sesame seeds. Serve immediately with steamed rice, quinoa, or roasted vegetables.
