Ingredients

  • - 4 cod fillets 6 oz each
  • - 4 tablespoons unsalted butter
  • - Juice of 2 lemons
  • - 2 cloves garlic minced
  • - 2 tablespoons fresh parsley chopped
  • - Optional: ¼ cup white wine
  • - Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C). Prepare a baking dish by lightly greasing it or lining it with parchment paper.
  • Pat the cod fillets dry with paper towels and season both sides generously with salt and pepper.
  • In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Stir in lemon juice, chopped parsley, and white wine (if using). Simmer gently for 1-2 minutes.
  • Place the cod fillets in the prepared baking dish. Spoon the lemon butter sauce evenly over each fillet.
  • Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork. Avoid overcooking to maintain moisture.
  • Remove from the oven, garnish with additional fresh parsley or a squeeze of lemon juice, and serve immediately.
