  • 1 can 28 oz crushed tomatoes
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Build Sauce : Pour in crushed tomatoes, stirring well to combine with the chicken and aromatics. Reduce heat to low, cover, and let simmer for 10–15 minutes to meld flavors.
  • Add Beans and Pasta : Stir in rinsed kidney beans and ditalini pasta. Add enough water to cover the pasta by about an inch (approximately 3–4 cups). Bring to a boil, then reduce heat to a gentle simmer. Cook uncovered, stirring occasionally, until pasta is al dente (about 10–12 minutes).
