Whisk Until Smooth: Use an electric mixer or a whisk to blend the mixture until it’s creamy and free of lumps. If you want an extra-rich flavor, consider adding 1/4 cup of sour cream into the mix!
Step 2: Fill the Tortillas
Lay Out the Tortillas: Grab 4 large flour tortillas and place them on a clean surface.
Add the Filling: Spoon about 2 tablespoons of the cheesecake mixture in the center of each tortilla.
Fold and Roll: Carefully fold the sides over the filling, then roll the tortilla tightly, ensuring the filling is sealed inside.
Step 3: Prepare for Frying
Cinnamon Sugar Mixture: In a shallow dish, mix together 1/4 cup of powdered sugar and 1 teaspoon of ground cinnamon. This will create a sweet coating for your finished ango.
Heat the Oil: In a large skillet, pour in about 1 inch of vegetable oil and heat it over medium heat until it shimmers (about 350°F or 175°C).
Step 4: Fry the Xango
Carefully Fry: Once the oil is hot, gently place the rolled tortillas in the skillet, being careful not to overcrowd the pan. Fry each side for about 2-3 minutes, or until they turn a beautiful golden brown.
Drain Excess Oil: Once fried, use tongs to remove the Xango from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
Step 5: Coat with Cinnamon Sugar
Roll in Sugar: While they’re still hot, immediately roll the fried Xango in the cinnamon sugar mixture until they’re evenly coated. This adds a delightful sweetness that perfectly complements the creamy filling.
